Creamy Cajun Pasta (Print Version)

# Ingredients:

01 - 3 green onions, sliced.
02 - 2 oz cream cheese.
03 - 15 oz fire roasted diced tomatoes.
04 - 1 Tbsp butter.
05 - 1 tsp thyme.
06 - 1/4 tsp salt.
07 - 2 cups chicken broth.
08 - 1 yellow onion, diced.
09 - 2 tsp smoked paprika.
10 - 1/4 tsp black pepper.
11 - 1 tsp oregano.
12 - 1/4 tsp cayenne pepper.
13 - 1 lb boneless, skinless chicken breast.
14 - 1 Tbsp olive oil.
15 - 1/2 lb penne pasta.
16 - 1/2 tsp onion powder.
17 - 1/2 tsp garlic powder.

# Instructions:

01 - In a little bowl, combine garlic powder, onion powder, salt, cayenne, smoked paprika, thyme, black pepper, and oregano.
02 - Cut the chicken into bite-sized pieces. Toss it with the Cajun spice mix till it’s fully coated.
03 - Melt some butter with olive oil in a big skillet. Brown the chicken on all sides.
04 - Toss in the diced onion and let it cook for around 2 minutes till it softens a bit.
05 - Pour in the pasta, chicken broth, and the tomatoes with their juice. Give it a good mix.
06 - Get it boiling, then lower the heat. Cover and let it cook for 10 minutes, stirring now and then, so the pasta softens.
07 - Mix in cream cheese to melt. Sprinkle green onions on top and enjoy!

# Notes:

01 - A deep skillet that holds 4 quarts works best.
02 - Adjust the heat up or down to keep it simmering.
03 - Keep stirring so the pasta doesn’t stick.
