Tuscan Sausage Soup (Print Version)

# Ingredients:

01 - 4 cups roughly chopped kale.
02 - 4-5 yellow potatoes, diced into 1-inch chunks.
03 - 1 tablespoon chopped garlic.
04 - ½ white onion, finely diced.
05 - 2 cups heavy cream.
06 - 6 cups chicken stock.
07 - 3 teaspoons table salt.
08 - 1 teaspoon ground black pepper.
09 - Chopped bacon or bits for topping.
10 - Grated parmesan for finishing.
11 - 1 pound ground spicy Italian sausage.
12 - 2 cups water.
13 - 4 tablespoons unsalted butter.

# Instructions:

01 - Cook sausage in a big pot for about 5-6 minutes until browned. Using a slotted spoon, take it out and set aside.
02 - Melt butter in the same pot, then toss in onions and cook until soft and see-through. Stir in garlic and let it cook for another minute.
03 - Pour in chicken broth, water, potatoes, salt, and pepper. Heat everything to a boil, then let it cook until the potatoes are soft.
04 - Add kale and cream to the pot, then return the cooked sausage. Taste and tweak the seasoning if needed.
05 - Sprinkle bacon and parmesan cheese on top before serving, if you like.

# Notes:

01 - Use mild Italian sausage if you prefer a less spicy option.
02 - No Italian sausage? Use plain sausage with added Italian herbs and chili flakes.
