Set the oven to 350°F. Cover a baking tray with parchment paper.

Slice the pastry sheet into 16 even squares and place them on the tray.

Put 3 or 4 apple slices and a brie piece on each square. Gently fold the corners to the center.

Coat the top of each pastry with the whisked egg.

Bake for 15 to 20 minutes, or until they're puffed up and golden. Enjoy while warm.
