In a pot, mix together cinnamon, milk, chocolate, and piloncillo. Warm gently, stirring often, until everything melts into the milk.

Take out the cinnamon stick once the mixture is smooth. Strain it if there are any bits.

Stir together masa harina and warm water until smooth. Add this to the pot with the vanilla and salt.

Let it gently cook for about 15 to 20 minutes on low heat. Whisk frequently so it doesn’t stick. You’ll know it’s good when it clings to your spoon.

Optional: blend with a hand blender for extra creaminess. Sprinkle a little cinnamon over the top before serving.
