Bang Bang Shrimp Wraps (Print Version)

# Ingredients:

→ Shrimp Prep

01 - 1 pound raw large shrimp, peeled and deveined with tails removed
02 - 2 eggs, large
03 - 1 1/2 cups of panko breadcrumbs
04 - 1/2 cup of tapioca flour, cornstarch, or arrowroot powder
05 - 1/2 teaspoon of garlic powder
06 - 1/2 teaspoon paprika
07 - 1/4 teaspoon onion powder
08 - Salt and pepper to your liking
09 - Spray oil for cooking

→ Saucy Mix

10 - 1/2 cup of mayonnaise
11 - 1 teaspoon (or more, if you'd like heat) of sriracha
12 - 1/4 cup of Thai-style sweet chili sauce

→ The Slaw

13 - 8 ounces of coleslaw vegetables
14 - 1/4 cup chopped green onions
15 - 1/4 cup roughly chopped cilantro
16 - Juice squeezed from 1/2 lime
17 - 2 tablespoons of mayo
18 - A dash of sriracha, optional
19 - Salt to suit your own flavoring

→ To Wrap It Up

20 - 10 soft tortillas (flour-based)
21 - Extra green onions (chopped) for topping

# Instructions:

01 - Start by drying shrimp with paper towels. Prepare three plates or bowls. Use one for flour mixed with seasoning, one for whisked eggs and water, and one for the breadcrumbs.
02 - One by one, coat shrimp by dipping in the flour, then egg, and finish with the breadcrumbs. Lay them in the air fryer basket and mist with cooking spray. If needed, cook in rounds.
03 - Set the air fryer to 390°F and cook the shrimp for 7 minutes. When halfway through, flip each one and reapply oil spray.
04 - While shrimp is cooking, mix the chili sauce, mayo, and hot sriracha in a medium-sized bowl.
05 - In a large mixing bowl, toss the coleslaw ingredients—lime juice, mayo, green onion, cilantro, sriracha, and salt. Combine everything well.
06 - Mix your air-fried shrimp with the prepared sauce. You can save some of the sauce to drizzle later if you’d like.
07 - Warm the tortillas before assembling. Fill each one with slaw and shrimp, then garnish with leftover green onions and extra sauce on top.
