Sweet Potato Ground Beef (Print Version)

# Ingredients:

01 - 1 pound of lean ground beef.
02 - 2 teaspoons of parsley flakes.
03 - 1/4 teaspoon garlic powder.
04 - 1 medium yellow onion, chopped.
05 - 2 teaspoons of dried rosemary.
06 - 1/2 cup of heavy cream.
07 - 1 tablespoon of olive oil.
08 - 14.5 ounces of vegetable broth.
09 - 2 medium-sized sweet potatoes, cut into cubes.
10 - 1/2 teaspoon black pepper.
11 - 2 cups of shredded cheddar cheese.
12 - 1 1/3 cups quick-cook rice.
13 - 1/2 teaspoon salt.

# Instructions:

01 - Set your oven to 400°F. Chop sweet potatoes and mix them with oil and spices right in the casserole pan.
02 - Bake the potatoes for half an hour.
03 - Sauté the beef in a pan until browned, then toss in the onions and cook until they soften up.
04 - Pour in the broth, cream, rice, and your beef mixture with the spuds. Cover it up and bake 15 minutes.
05 - Sprinkle cheese all over the top and bake uncovered for another 10 minutes.
06 - Let it sit for 10-15 minutes to settle, then sprinkle with parsley before serving.

01 - Feel free to use sweet potatoes of any color.
02 - If your beef is fatty, make sure to drain the extra grease.
03 - Chicken broth works as a swap for vegetable broth.
