Cheesy Bean Bake (Print Version)

# Ingredients:

→ Core Ingredients

01 - 1 medium-sized onion, diced small
02 - 1.5 cups cherry tomatoes (roughly 200 grams)
03 - 3 cups prepared white beans (around 480 grams)
04 - 2.5 cups finely chopped spinach (nearly 200 grams)
05 - 2 large tomatoes, chopped into small pieces

→ Flavors & Spices

06 - Salt to taste
07 - 1 tsp Italian herb mix
08 - ¼ tsp ground black pepper
09 - 2 big garlic cloves, minced
10 - ½ tsp dried chili flakes
11 - 1 tbsp tomato puree

12 - 1 tbsp olive oil
13 - 200 grams (2 cups) shredded cheese

# Instructions:

01 - In a pan, warm up the olive oil. Add onion and garlic, cooking until the onion looks clear.
02 - Throw in black pepper, chili flakes, and Italian seasoning. Stir, then mix in tomato puree and cook for about half a minute.
03 - Toss in the chopped tomatoes along with some salt. Let them soften for 8-10 minutes. Add the cherry tomatoes and cook for up to 12 minutes, until they're slightly softened.
04 - Add in the white beans and spinach, letting it cook for 5-7 minutes until the spinach softens.
05 - Move everything to a baking dish, sprinkle cheese over the top, and cover with foil. Put it in the oven set at 400°F (200°C) for around 30 minutes.

# Notes:

01 - You can swap white beans for other kinds of beans.
02 - For a faster option, use pre-made marinara instead of cooking tomatoes.
03 - Want more veggies? Add mushrooms, bell peppers, or broccoli.
04 - Make sure the cheese is rennet-free if you're vegetarian.
