Cheese Stuffed Doritos (Print Version)

# Ingredients:

01 - 1/3 cup (50g) all-purpose flour
02 - 2 beaten eggs
03 - 14oz (400g) Mozzarella, low-moisture variety
04 - 6.4oz (180g) bag of spicy Chilli Heatwave Doritos
05 - 4 cups (1 litre) vegetable or sunflower oil for frying

→ Seasonings

06 - 1/4 teaspoon black pepper
07 - 1/4 teaspoon fine salt
08 - 1 teaspoon smoked paprika
09 - 1 teaspoon cayenne pepper
10 - 1/2 teaspoon garlic powder

# Instructions:

01 - Cut the mozzarella block into squares about 1/3 of an inch thick. Then slice each square diagonally into triangles—24 pieces total.
02 - Use a food processor or smash Doritos in a sealed bag to create fine crumbs. Arrange three bowls: one for the crushed chips, one for eggs, and another for flour mixed with spices.
03 - Dip each mozzarella triangle into the flour mixture first, then the egg, and finally press into the Doritos crumbs. Coat them well at each stage and let them sit for about 10 to 15 minutes afterward.
04 - Heat the oil to 180C/350F. Fry in small batches for 1-2 minutes until cheese just begins to ooze. Place hot pieces on a rack and sprinkle with salt while still warm.

01 - Opt for low-moisture mozzarella to avoid soggy bites.
02 - Doubling the coating works but can be messy—it'll need more eggs and chips.
03 - Air frying or oven baking is fine at 200C/400F, but freeze cheese triangles first to prevent melting.
04 - Tastes amazing paired with salsa, sour cream, garlic dips, or marinara sauce.
