Cheesy Egg Bake (Print Version)

# Ingredients:

01 - A dozen big eggs.
02 - 18 ounces of rich cottage cheese.
03 - One full cup of whole milk.
04 - Half a cup grated Parmesan, split in two.
05 - 1/4 teaspoon of fine salt.
06 - 1/4 teaspoon of ground black pepper.
07 - Three cups finely chopped baby spinach.
08 - Non-stick cooking spray.

# Instructions:

01 - Set your oven to 375°F and coat a 9x13 pan with cooking spray.
02 - Beat the eggs, then mix in cottage cheese, milk, most of the Parmesan, salt, and pepper.
03 - Fold in the spinach until it’s evenly mixed.
04 - Pour into pan, sprinkle remaining Parmesan. Bake for 35 minutes, uncovered, till it’s firm.
05 - Let it sit for 20 minutes before slicing it into 8 pieces.

01 - Make it 2 days ahead if needed.
02 - Freeze for up to 3 months.
03 - Substitute with egg whites if you want.
