Cheesy Mushrooms Delight (Print Version)

# Ingredients:

→ Mushroom Prep

01 - 1 teaspoon balsamic vinegar
02 - 1/8 teaspoon crushed black pepper
03 - 1/8 teaspoon salt
04 - 12-15 button or cremini mushrooms
05 - 1 teaspoon olive oil

→ Stuffing Mix

06 - 2 tablespoons chopped fresh cilantro
07 - 1/4 cup finely chopped onion
08 - 1/4 cup diced bell peppers
09 - 1/4 teaspoon paprika or mild red pepper powder
10 - 1/4 teaspoon salt
11 - 1 teaspoon coriander powder
12 - 1/3-1/2 cup shredded mozzarella cheese
13 - 1 tablespoon minced green chili or jalapeno

# Instructions:

01 - Use a wet towel to carefully clean the mushrooms. Snap off the stems by gently twisting them to hollow out the caps.
02 - In a bowl, mix the mushroom caps with olive oil, black pepper, salt, and balsamic vinegar. Leave them aside for now.
03 - In a mixing bowl, toss together cheese, cilantro, bell peppers, onion, chili, and spices. Stir it all up nicely.
04 - Scoop the filling into the caps using a small spoon. Press it down firmly so it stays in place.
05 - Lay the stuffed mushroom caps in the air fryer basket. Cook them at 320°F for around 9 to 10 minutes.
06 - Give the mushrooms about 5 minutes to cool off before bringing them to the table.

# Notes:

01 - You can use any leftover filling to whip up a veggie and cheese frittata.
02 - Feel free to replace coriander with Italian seasoning if you like.
