Use a wet towel to carefully clean the mushrooms. Snap off the stems by gently twisting them to hollow out the caps.

In a bowl, mix the mushroom caps with olive oil, black pepper, salt, and balsamic vinegar. Leave them aside for now.

In a mixing bowl, toss together cheese, cilantro, bell peppers, onion, chili, and spices. Stir it all up nicely.

Scoop the filling into the caps using a small spoon. Press it down firmly so it stays in place.

Lay the stuffed mushroom caps in the air fryer basket. Cook them at 320°F for around 9 to 10 minutes.

Give the mushrooms about 5 minutes to cool off before bringing them to the table.
