Cheesy Chicken Scampi (Print Version)

# Ingredients:

01 - 12 oz jumbo pasta shells
02 - 2 lbs chicken tenders, chopped into pieces
03 - 3 cups shredded cheese (mozzarella, jack, cheddar), save some for later
04 - 3 tablespoons olive oil

→ Chicken Seasoning

05 - 1 teaspoon garlic powder
06 - 1 teaspoon cayenne pepper
07 - 1 teaspoon onion powder
08 - 2 teaspoons paprika
09 - 1/2 teaspoon freshly ground black pepper
10 - 1/2 teaspoon oregano
11 - 1/2 teaspoon salt

→ Scampi Sauce

12 - 1 lemon, zest and juice
13 - 2 tablespoons fresh parsley, minced
14 - 1/2 teaspoon red pepper flakes
15 - 5 cloves garlic, finely chopped
16 - 1/3 cup pasta cooking water
17 - 6 tablespoons butter, divided and softened
18 - 1 cup white wine (dry)
19 - 2/3 cup chicken broth
20 - 2/3 cup heavy whipping cream
21 - 1/3 cup grated parmesan

# Instructions:

01 - Combine all the seasoning (set aside 1 tsp separately). Toss diced chicken with olive oil and the seasoning mix. Cook in a hot pan with oil until the chicken's inside hits 165°F.
02 - Sauté garlic in melted butter. Add white wine and let it cook down a bit. Stir in the rest of the sauce ingredients. Let this simmer to thicken. Meanwhile, boil the pasta shells just until tender.
03 - Mix your cooked chicken with half the shredded cheese.
04 - Cover the bottom of the baking dish with some sauce. Stuff the shells with the chicken and cheese mix and put them into the dish. Pour the rest of the sauce over everything.
05 - Sprinkle the shells generously with the leftover cheese. Pop it in a 375°F oven for 15-20 minutes, or until it's golden and bubbly on top.
