# Ingredients:

→ Chicken Crunch Mix

01 - 4 smaller pieces from 2 chicken breasts (skinless and boneless, 1½ lbs), sliced thinly
02 - 1 teaspoon garlic powder seasoning
03 - ½ cup regular flour for coating
04 - 3 beaten eggs
05 - Larger flakes from 1 cup of panko crumbs
06 - ¼ cup of Parmesan, freshly shredded
07 - Salt and black pepper for flavoring as needed

→ Zesty Lemon Sauce

08 - 2 tablespoons of lemon juice (squeezed fresh)
09 - 1 teaspoon honey
10 - 1 clove of garlic minced small
11 - ½ cup of thick Greek yogurt (plain)
12 - A teaspoon of Dijon mustard
13 - Pepper and a pinch of salt for seasoning to your liking

14 - 4 crispy croissants from the bakery
15 - 4 cups chopped crisp lettuce (like Romaine)
16 - ¾ cup of Parm cheese (grated)
17 - 2 creamy avocados, thinly sliced
18 - Hot honey drizzle (optional, for extra flavor)
19 - 2 tablespoons of warm, melted butter

# Instructions:

01 - Slice the chicken breasts into halves and pat them dry. Make three breading bowls: seasoned flour and garlic in one, eggs stirred till smooth in the next, and Parmesan-panko mix in the last.
02 - Dip each chicken piece in the flour until it's coated, then the egg wash, and finish by pressing it into the panko-Parmesan bowl. Make sure everything sticks.
03 - Heat oil in a heavy skillet to medium-high. Fry the breaded chicken for 2-3 minutes per side till golden brown and fully cooked. Let them drain on a paper towel layer.
04 - Blend yogurt, dijon mustard, lemon, honey, garlic, salt, and pepper in a bowl until it's creamy and uniform.
05 - Slice croissants through the middle and brush melted butter across the tops. Sprinkle on Parmesan and broil until crispy and golden, about 1-2 minutes. Watch closely to avoid burning.
06 - Mix the lettuce and any leftover Parmesan with the lemon dressing in a big bowl. Coat it evenly.
07 - On the bottom croissant half, place chicken, avocado pieces, and lettuce. Drizzle with hot honey for some sweetness if you like, then top with the cheesy half of the croissant.

01 - If the chicken feels too large for the croissant, trim it up. A little overhang won't hurt!
