Holiday Christmas Salad (Print Version)

# Ingredients:

→ Tangy Lime Honey Dressing

01 - ⅓ cup olive oil, extra virgin
02 - 3 tbsp Dijon-style mustard
03 - 3 tbsp sweet honey
04 - Juice from 1 large lime, freshly squeezed

→ Fresh Salad Ingredients

05 - 6 ounces of baby spinach leaves
06 - ½ cup dried cranberries
07 - ⅓ cup pomegranate seeds
08 - 1 cup pecan halves, toasted (some chopped small)
09 - ⅓ cup crumbled goat cheese
10 - 3 mandarin oranges, peeled and separated into segments

# Instructions:

01 - In a jar with a lid, combine the oil, mustard, honey, and lime juice. Give it a good shake or whisk until it's slightly thickened. Add more lime juice if you'd like a tangier taste.
02 - For different portions, put spinach into bowls. Layer on pecans, orange slices, pomegranate bits, cranberries, and goat cheese. Pour dressing over the top before serving.
03 - In a big serving dish, mix the spinach with cranberries, goat cheese, and orange sections. Toss together with the dressing. Add pecans and pomegranate seeds right before serving.
