Sweet Holiday Dish (Print Version)

# Ingredients:

01 - 5 lbs. of sweet potatoes, peeled and cooked.
02 - 4 eggs, gently whisked.
03 - Half a cup of fresh orange juice.
04 - Half a cup of softened butter.
05 - Half a cup of granulated sugar.
06 - 1 tsp of vanilla.
07 - 1/2 tsp of ground nutmeg.
08 - A pinch of salt.
09 - 1 cup of mini marshmallows.

# Instructions:

01 - Turn your oven on to 350°F (175°C) and grease a baking dish that holds 3 quarts.
02 - Use a big bowl to mash the cooked sweet potatoes until smooth and lump-free.
03 - Toss in the eggs, orange juice, butter, sugar, vanilla, nutmeg, and a pinch of salt. Stir until everything looks well mixed.
04 - Scoop the potato mixture into your greased dish and spread it out so it’s even.
05 - Pop it into the oven and bake for 35 to 40 minutes, or until it’s set in the middle.
06 - Take the dish out, top it with the marshmallows, and stick it back into the oven.
07 - Cook for another 5 to 10 minutes, until the marshmallows puff up and get gooey.
08 - Dish it out while it’s warm.
