Turn your oven on to 350°F (175°C) and grease a baking dish that holds 3 quarts.

Use a big bowl to mash the cooked sweet potatoes until smooth and lump-free.

Toss in the eggs, orange juice, butter, sugar, vanilla, nutmeg, and a pinch of salt. Stir until everything looks well mixed.
