Throw in the cream of tartar with the whites, then whip them until stiff peaks form.

Mix the yolks together with the cottage cheese, salt, and optional extras until smooth and combined.

Add whipped whites to the yolk mixture gradually in three parts. Do it carefully so the fluffiness stays intact.

Drop dollops of the mix onto the lined tray, aiming for 6-8 portions. Bake for 25-30 minutes till they're golden. Let them cool fully before enjoying.
