Crockpot Tortellini Soup (Print Version)

# Ingredients:

01 - ¾ pound of mild or hot Italian sausage.
02 - 1½ teaspoons of seasoning mix for Italian meals.
03 - 2 celery stalks, chopped into slices.
04 - 2 tablespoons of thick tomato paste.
05 - ¾ teaspoon of salt to taste.
06 - 4 cups of chicken broth without much sodium.
07 - ¼ cup of finely shredded Parmesan.
08 - 2 cups of either spinach or kale, roughly cut.
09 - ½ onion, chopped very small.
10 - 3 large garlic cloves, minced up.
11 - 2 big carrots, peeled and cut into chunks.
12 - 1 cup of cream, your choice.
13 - 3 cups of fresh or frozen cheese tortellini.

# Instructions:

01 - In a pan on medium-high, cook sausage and onion until browned nicely. Drain off extra grease if you'd like.
02 - Mix in salt, garlic, tomato paste, and the Italian spice mix. Let it cook another 2 minutes.
03 - Move the meat mixture into the slow cooker. Add chopped carrots, broth, and celery.
04 - Put the lid on and let it cook until soft—either 5-6 hours on low or 2-3 hours on high.
05 - Throw in the tortellini, Parmesan, spinach, and cream. Stir and cook for 10-15 minutes till pasta softens.
06 - Tweak the salt or seasoning until it tastes just right to you before digging in!

# Notes:

01 - Chicken or white beans can stand in for the sausage.
02 - Any cream you like will work in this dish.
