Crispy Egg Rolls (Print Version)

# Ingredients:

01 - 3 cups finely shredded cabbage.
02 - 1 carrot, finely grated.
03 - 3 scallions, sliced thinly.
04 - 1 lb minced chicken or pork.
05 - 1 clove garlic, finely chopped.
06 - 1 tablespoon of oil for cooking.
07 - 1 tablespoon fresh ginger, finely grated.
08 - 1 tablespoon soy sauce.
09 - 1 tablespoon rice wine vinegar.
10 - 12 wrappers for egg rolls.
11 - Oil for brushing the rolls.

# Instructions:

01 - Brown the meat for about 6 minutes, then stir in the veggies and seasonings. Keep stirring for another 3 minutes until cabbage wilts.
02 - Take off the heat and allow the mixture to cool completely.
03 - Spoon 1/4 cup of filling onto a wrapper, dampen edges with water, fold into a tight roll, sealing the edges firmly.
04 - Put rolls in a single layer in the air fryer basket, brush with oil. Cook for 6 minutes at 350°F, flip, brush again, and cook for another 5 minutes.

# Notes:

01 - You can fry these in a pan instead.
02 - The filling can be prepped in advance.
03 - Avoid stacking rolls during cooking.
