01 - 85g plain flour
02 - 1/2 bunch dill (about 10g), chopped small
03 - 2 large garlic cloves, crushed
04 - Zest of 1 lemon
05 - Olive oil for frying
06 - 2 large tomatoes (about 250g), diced finely
07 - 1/2 teaspoon salt, or adjust to taste
08 - Black pepper, season as needed
09 - 1/2 red onion, chopped finely
10 - 1/2 teaspoon baking powder
11 - 1/2 bunch parsley (around 15g), minced

# Instructions:

01 - Chop your tomatoes into small pieces and put them in a big bowl.
02 - Toss in the onions, crushed garlic, lemon zest, and herbs. Stir in the flour, baking powder, salt, and pepper next until it turns into a sticky batter.
03 - Pour olive oil into a frying pan to cover the base and set it over medium heat.
04 - Scoop generous spoonfuls of the batter into the hot oil. Fry each side for a few minutes, watching for a golden color on both sides.
05 - Take them out and serve while they're still crispy and hot.
