Set your oven to 400°F/200°C and let it preheat.

Chop off stems, peel off any bad leaves, then halve the sprouts.

On your baking tray, combine brussels sprouts with bacon, thyme, oil, pepper, and salt.

Lay sprouts down cut-side first to get them brown and golden.

Stir together vinegar and honey in a small bowl.

Pour the honey-vinegar combo over the sprouts. Toss them to cover evenly.
