Tater Tot Cups (Print Version)

# Ingredients:

01 - 60 frozen tater tots.
02 - 1 cup grated colby cheese.
03 - 1 cup crumbled cooked bacon.
04 - 1 tablespoon plain Greek yogurt.
05 - 2 green onions, sliced thinly.
06 - Cooking spray with olive oil.

# Instructions:

01 - Set the oven to 350-375°F and generously coat a 12-muffin tin with olive oil cooking spray.
02 - Line each muffin slot with 5 tater tots. Bake for 10 minutes, then use a shot glass to gently press the center of each to shape them into cups.
03 - Stuff the cups with bacon and grated cheese. Pop them back into the oven for 10-15 minutes, until the cheese is gooey and bacon edges are crispy.
04 - Cool for a few minutes on a wire rack, then carefully transfer each cup to a baking sheet lined with parchment.
05 - Drizzle yogurt on top and sprinkle with green onion slices. Serve right away while warm.

01 - Try swapping in another cheese you like.
02 - Sour cream works as a substitute for yogurt.
