Open the salmon can and remove all liquid. Use a fork to mash the salmon in a bowl until it’s all flaked.

Mix together the onion, cornmeal, flour, mayo, chili powder, egg, salmon, salt, and pepper. Stir well so it’s fully blended.

Using a measuring cup, press the mixture into even-sized patty shapes for cooking.

Warm up the oil in a skillet over medium heat. Fry each patty for around 5 minutes on both sides until they’re golden and crisp.
