Southern Salmon Patties (Print Version)

# Ingredients:

01 - 1 can (14.75 oz) of pink salmon (bones optional)
02 - 1/4 cup finely diced onion
03 - 1/4 cup plain flour or almond flour
04 - 1/4 cup cornmeal (yellow)
05 - 1 large egg, beaten
06 - 1/4 teaspoon of chili powder
07 - 3 tablespoons of mayo
08 - 1/2 tablespoon of vegetable or olive oil
09 - Salt and pepper as you like

# Instructions:

01 - Open the salmon can and remove all liquid. Use a fork to mash the salmon in a bowl until it’s all flaked.
02 - Mix together the onion, cornmeal, flour, mayo, chili powder, egg, salmon, salt, and pepper. Stir well so it’s fully blended.
03 - Using a measuring cup, press the mixture into even-sized patty shapes for cooking.
04 - Warm up the oil in a skillet over medium heat. Fry each patty for around 5 minutes on both sides until they’re golden and crisp.
