Warm Dumpling Bowl (Print Version)

# Ingredients:

01 - 2 tablespoons soy sauce.
02 - 6 cups vegetable stock.
03 - 2 tablespoons olive oil, split up.
04 - 4 cloves of garlic, finely chopped.
05 - 2 tablespoons ginger, freshly grated.
06 - 8 ounces of shiitake mushrooms, thinly sliced.
07 - 16-20 ounces of frozen dumplings.
08 - 3 baby bok choy, separated and stems trimmed.
09 - 5 scallions, finely chopped.
10 - Black pepper as needed.
11 - 2 teaspoons sesame oil.

# Instructions:

01 - Warm a tablespoon of oil in a big pot over medium-high heat. Cook the mushrooms until they’re golden brown.
02 - Toss in garlic, ginger, and the other tablespoon of oil. Stir for a minute or two until it smells amazing.
03 - Pour in the vegetable stock and soy sauce. Let it come to a rolling boil.
04 - Drop in the frozen dumplings, bok choy, and half of the scallions. Cook for around 3-4 minutes until the dumplings are heated through.
05 - Mix in the sesame oil and season it with some black pepper. Taste it to adjust the flavors if needed.

# Notes:

01 - It's best eaten fresh since dumplings can get soggy if left sitting.
02 - Switch it up by trying different veggies or dumpling fillings.
