Easy Chicken Soup (Print Version)

# Ingredients:

01 - 8 oz uncooked rotini pasta.
02 - 1 tablespoon butter.
03 - 1/2 cup bread crumbs.
04 - 2 teaspoons Italian spice mix.
05 - 1 teaspoon salt.
06 - 1 teaspoon black pepper, ground.
07 - 1 (28 oz) can crushed tomatoes.
08 - 1 (15 oz) can tomato sauce.
09 - 3 boneless chicken breasts.
10 - 1 tablespoon chopped garlic.
11 - 4 cups chicken stock.
12 - 1 cup heavy cream.
13 - 1 cup fresh parmesan, thinly shaved.
14 - 1 1/2 cups mozzarella, shredded.

# Instructions:

01 - Toss the chicken breasts, garlic, crushed tomatoes, tomato sauce, salt, pepper, spice mix, and chicken stock into the slow cooker.
02 - Pop the lid on and let it cook. Use low heat for around 6-8 hours, or speed it up with high heat for 3-4 hours.
03 - Pull the chicken apart, then blend in the parmesan, cream, and uncooked pasta. Let it cook another 15-30 minutes, based on the heat setting.
04 - While waiting for the soup, toast up the bread crumbs with butter in a pan on the stovetop.
05 - Put the soup in bowls and sprinkle each with mozzarella and crunchy breadcrumbs just before eating.

# Notes:

01 - Made using a slow cooker, so there's barely any hands-on time.
02 - Topped with cheesy mozzarella and toasted breadcrumbs for a tasty crunch.
03 - Great for cold weather and makes enough to feed a crowd.
