Easy Homemade Chili (Print Version)

# Ingredients:

01 - 2 cups diced green peppers (around 2 small ones).
02 - 1.5 cups chopped yellow onion (from one small onion).
03 - 2 pounds of ground turkey or beef.
04 - Two 15-ounce cans of kidney beans, rinsed.
05 - One 15-ounce can of tomato sauce.
06 - Two 15-ounce cans of diced tomatoes.
07 - 6 ounces of tomato paste.
08 - 15 ounces of water.
09 - 3 tablespoons cumin powder.
10 - 3 tablespoons chili powder.
11 - 1 teaspoon chipotle powder.
12 - 2 tablespoons of garlic powder.
13 - 2 tablespoons onion powder.
14 - 1 tablespoon smoked paprika.
15 - Half a teaspoon of cayenne pepper.
16 - 1 teaspoon of ground white pepper.
17 - 1 teaspoon baking soda.
18 - Half a tablespoon of salt.

# Instructions:

01 - Cook the onions and green peppers over medium heat in a big Dutch oven. Stir occasionally until soft and golden.
02 - Toss in all your spices, except baking soda, and stir for about a minute or two. Don't let it stick to the pan.
03 - Add the ground meat and cook it. Leave it slightly pink so you don't overdo it before other ingredients join in.
04 - Stir in diced tomatoes, tomato paste, tomato sauce, and water. Mix well so it's all blended together.
05 - Put the heat on low to medium and let everything simmer gently for around 15 minutes while stirring occasionally.
06 - Gently stir in the kidney beans and keep mixing until they’re evenly spread out.
07 - Sprinkle in the baking soda and stir. The sauce will bubble up, so keep stirring until the fizz has calmed down.
08 - Turn off the heat and serve hot.
