Taco Bake (Print Version)

# Ingredients:

→ Base

01 - 1 tbsp olive oil
02 - 1 pound of lean beef, ground
03 - Half a medium onion, diced up

→ Seasonings

04 - 1/2 tsp garlic powder
05 - 1/2 tsp cumin (ground)
06 - 1 tbsp chili powder

→ Casserole Ingredients

07 - 1 (12 oz) can packed corn kernels, liquid drained
08 - 1 (14 oz) can black beans (rinse and drain thoroughly)
09 - 15.5 oz jar of salsa
10 - 2 cups Nacho Cheese Doritos, crushed
11 - 2 cups shredded cheddar or a Mexican cheese blend, split in half

→ Optional Toppings

12 - Lettuce, scallions, avocado, sour cream, tomatoes, olives (black), cilantro

# Instructions:

01 - Set oven to 350°F and move the rack to the center.
02 - Heat a skillet on medium-high. Add oil and brown the beef for 5 minutes while crumbling it. Add onions and seasoning, cook another 5 minutes.
03 - Spread those crushed Doritos in a casserole dish (9x13) to form an even layer.
04 - Pour off extra grease from beef. Add salsa, beans, corn, and one-half of the shredded cheese. Stir on heat until cheese melts, then spread it all over the Doritos.
05 - Sprinkle the rest of the cheese on top. Bake it for around 15-20 mins, uncovered, until cheese’s nice and melted (it’ll get bubbly!). Add your favorite toppings before digging in.
