Egg Noodle Tomato Soup (Print Version)

# Ingredients:

01 - 2 servings of noodles.
02 - 2 green onions, sliced up.
03 - 1.5 tablespoons of soy sauce.
04 - 2.5 tablespoons of ketchup.
05 - 1 teaspoon of white pepper.
06 - Salt as needed.
07 - 3 eggs.
08 - 4 medium tomatoes, diced.
09 - 5 cups of stock, chicken or veggie.

# Instructions:

01 - Whisk the eggs in a bowl with salt and pepper until blended.
02 - Heat some oil in a pot. Pour in the eggs, let them sit for half a minute, then scramble. Take them out and put them aside.
03 - Throw the chopped tomatoes into the same pot and cook them on medium-high for 2 to 3 minutes.
04 - Add the white parts of the green onion to the pot and let them cook for 1 to 2 minutes until softened.
05 - Stir in soy sauce, ketchup, and white pepper, making sure it blends evenly.
06 - Pour in the stock, wait until it starts to simmer, then add the eggs and noodles back in. Let it simmer for 2 more minutes.
07 - Sprinkle the green onion slices on top and enjoy hot.

01 - Boil noodles separately, or cook them in the soup based on package directions.
02 - Feel free to adjust salt and seasonings as needed.
03 - Add meat or extra veggies if you'd like more variety.
