Heat your oven to 350°F (175°C), then set aside two parchment-lined baking trays.

In a big mixing bowl, use an electric mixer to cream the butter, granulated sugar, and brown sugar for about 2 minutes until fluffy.

Mix in the egg yolks and vanilla on medium speed for 2 minutes. The mixture should turn creamy and pale.

Pop them in the oven for 10–12 minutes. Take them out at 10 minutes for softer cookies or leave the full 12 minutes for crispier ones.
