In a small mixing bowl or jug, stir together the plain flour, baking powder, and salt gently.

Stir the sourdough starter and water into the dry mix. Mix well with a whisk till you get a thick yet pourable texture, like heavy cream. If it’s too thick, just add a splash more of water.

Warm up a frying pan on low-to-mid heat. Add some butter to the crumpet rings and coat the insides before setting them in the pan.

Pour the batter into the rings, filling halfway up. Place the lid on the pan and cook gently for about 10-20 minutes. Watch as bubbles pop on the surface. If holes aren’t forming, give the tops a bit of poking with a toothpick!

When the top has set with lots of visible holes, flip the crumpets over to lightly brown the bottom. Don’t flip early—wait till it’s fully firm so the holes stay intact! Serve warm with your favorite spread like butter and jam.
