French Onion Meatballs (Print Version)

# Ingredients:

01 - About 2 and 1/2 cups of chicken stock.
02 - 6 slices of baguette or similar crusty bread.
03 - 3-4 onions (yellow is best), sliced up.
04 - Two tablespoons each of fresh sage and thyme.
05 - A single egg, beaten gently.
06 - 1 and 1/4 pounds of ground chicken.
07 - 1 slice of whole wheat bread.
08 - 6 tablespoons of salty butter.
09 - 1 cup shredded gruyere cheese.
10 - Around 1/4 cup cream or whole milk.
11 - 3 minced garlic cloves.
12 - 3/4 cup dry white wine.
13 - Sliced mushrooms, about 2 cups.

# Instructions:

01 - Turn the oven on to 450°F. Grease your 9x13 dish lightly.
02 - Combine soaked bread, chicken, egg, and spices. Roll into small ball shapes.
03 - Bake the balls for 15 minutes until browned outside but still soft.
04 - In a pan, cook onions with butter slowly. Add wine a little at a time over 25-30 mins.
05 - Stir in mushrooms, herbs, broth. Let it simmer with meatballs for 10 minutes. Add cream at the end.
06 - Top with crispy bread slices and cheese. Broil 3-5 minutes until bubbly.

# Notes:

01 - You can prep in advance up to the simmering step.
02 - Pour the wine little by little as onions cook.
03 - Be sure to soak the bread thoroughly.
