Fresh Breakfast Sausage (Print Version)

# Ingredients:

01 - 1 tablespoon cooking oil.
02 - 1 pound ground pork or pork shoulder.
03 - 1 tablespoon chopped fresh thyme.
04 - 1 teaspoon black pepper.
05 - 1 tablespoon chopped fresh sage.
06 - 1½ teaspoons of paprika.
07 - ¼ teaspoon ground nutmeg.
08 - 1½ teaspoons of salt (coarse).
09 - 1½ teaspoons red chili flakes.
10 - 1½ teaspoons brown sugar.
11 - 3 grated garlic cloves.

# Instructions:

01 - For pork shoulder, chill 1-inch pieces for about 15-20 minutes, then grind using a medium grinder plate.
02 - Combine the garlic, spices, herbs, sugar, salt, and pepper into the pork until well mixed.
03 - Make a small patty and cook it to see if the flavors work for you. Adjust if needed.
04 - Shape pork mixture into patties around 2½ to 3 inches wide.
05 - Warm oil in a pan on medium heat. Fry patties for 3-4 minutes on each side. Enjoy while warm.
