Garlic Mushroom Sandwich (Print Version)

# Ingredients:

01 - 8 slices of sourdough bread.
02 - 1/2 teaspoon optional chili flakes.
03 - 250g mushrooms, chopped up.
04 - 2 crushed garlic cloves.
05 - Salt and pepper, as you like.
06 - 2 tablespoons of butter.
07 - 1 tablespoon olive oil.
08 - 1 teaspoon oregano, dried.
09 - Extra butter for cooking.
10 - A cup of grated mozzarella.
11 - A cup of sharp cheddar, shredded.
12 - Juice from 1 teaspoon of lemon.

# Instructions:

01 - Start by heating some oil in a pan. Toss in the mushrooms and cook until they’re nice and brown. Mix in butter, garlic, chili (if using), and oregano. Finish with some lemon juice, salt, and pepper. Take it off the heat when done.
02 - Combine your mozzarella and cheddar cheeses in a bowl.
03 - Take four bread slices, spread the cheese mixture across them, and layer the cooked mushrooms on top. Add the last four slices to make them sandwiches.
04 - Spread butter on the outer bread sides. Cook in a skillet until the outside is golden. Flip over and do the same for the other side. The cheese should get gooey and melted.

# Notes:

01 - Any kind of mushrooms works.
02 - Use more or less garlic, whatever you like best.
03 - Mushrooms can be cooked earlier if you'd like.
04 - Pairs perfectly with a bowl of soup.
05 - Use your favorite cheese combo.
06 - Best eaten while warm.
