Roasted Garlic Shrimp (Print Version)

# Ingredients:

→ Marinade

01 - 4 cloves garlic, minced (or use a garlic press)
02 - 1/4 teaspoon ground black pepper, freshly cracked
03 - 4 tablespoons olive oil, extra virgin
04 - 1/2 teaspoon kosher salt
05 - 1/2 teaspoon oregano, dried
06 - Zest from one whole lemon
07 - 1/2 teaspoon dried basil

→ Main Ingredients

08 - 2 lbs of shrimp (peeled, veins removed)
09 - 2 tablespoons parsley (Italian flat-leaf), chopped for finishing
10 - 1/2 cup Parmesan, finely grated

# Instructions:

01 - In a large plastic or glass mixing bowl, stir together the olive oil, minced garlic, lemon zest, and dry seasonings. Toss the shrimp in until coated evenly. Cover the bowl with plastic wrap and let it chill in the fridge for 1-3 hours.
02 - Set your oven to 400°F so it warms up. Mix the Parmesan into the shrimp marinade right in the same bowl.
03 - Place the shrimp in an even layer on a 13x9 glass dish or baking sheet. Cook for about 8 minutes until the shrimp are firm, pink, and perfectly done.
04 - Before serving, give it a light drizzle of olive oil and sprinkle on the fresh parsley for a pretty garnish.

# Notes:

01 - Frozen shrimp works fine—thaw them in the fridge overnight before starting this recipe.
