Puff Pastry Twists (Print Version)

# Ingredients:

01 - 2 cups fresh blackberries.
02 - 2 sheets of puff pastry.
03 - 8 oz goat cheese.
04 - ¼ cup water.
05 - 1 tablespoon fresh lemon juice.
06 - ¾ cup granulated sugar.
07 - 2 teaspoons finely chopped thyme.
08 - Zest from 2 lemons.
09 - 1 egg, whisked.
10 - 4 teaspoons raw sugar crystals.

# Instructions:

01 - Boil water with sugar, blackberries, and lemon juice in a pot for about 20-30 minutes. Mash while cooking, then cool completely.
02 - Let puff pastry sit to soften for 20 minutes. Roll it on a floured surface into a large rectangle. Layer goat cheese and spoon jam over half.
03 - Slice the dough into 12 thin pieces. Fold each and twist gently as you pull. Do this for the second pastry too.
04 - Coat with egg wash, sprinkle with lemon sugar mix, and bake for 16-18 minutes at 400°F. Let them cool off before eating.

01 - You can prep the jam ahead and store it in the fridge.
02 - Tastes best once it's at room temperature.
