Boil water with sugar, blackberries, and lemon juice in a pot for about 20-30 minutes. Mash while cooking, then cool completely.

Let puff pastry sit to soften for 20 minutes. Roll it on a floured surface into a large rectangle. Layer goat cheese and spoon jam over half.

Slice the dough into 12 thin pieces. Fold each and twist gently as you pull. Do this for the second pastry too.

Coat with egg wash, sprinkle with lemon sugar mix, and bake for 16-18 minutes at 400°F. Let them cool off before eating.
