Tangy Grapefruit Bars (Print Version)

# Ingredients:

→ Crust

01 - 1 cup all-purpose flour
02 - ½ cup softened butter
03 - ⅛ teaspoon table salt
04 - ½ cup granulated sugar

→ Grapefruit Filling

05 - 2 large eggs
06 - 3 tablespoons plain flour
07 - ¾ cup white sugar
08 - 1 grapefruit, juiced (you'll need ¼ cup) and zested
09 - A sprinkle of powdered sugar for topping

# Instructions:

01 - Set oven to 350°F. Line an 8x8 baking pan with parchment paper going both ways, leaving extra for easy lifting later.
02 - Cream together sugar and butter until fluffy, about 3 minutes. Stir in flour and salt until it all comes together. Push the mix into your pan evenly.
03 - Place in oven and bake for 15-18 minutes or until the edges start turning golden. Let it cool for a bit.
04 - Whisk together the eggs and sugar for about a minute so it's a bit thick. Mix in the flour, grapefruit juice, and zest. Pour this over the warm crust.
05 - Bake for 18-20 minutes or until firm and golden at the top. Allow to cool completely before slicing into 16 pieces.

01 - Keep leftovers in a sealed container with parchment between layers.
02 - Make sure the center is set and not jiggly before removing from the oven.
03 - Fresh grapefruit adds the best flavor punch.
