Set your oven to 375°F. Cover a big baking tray with parchment paper and keep it nearby.

Blend the butter, eggs, and cake mix in a bowl using a stand or hand mixer until smooth.

Stir in the vanilla, mint (or peppermint) extract, and green food dye. Mix slowly until everything comes together. Expect a sticky, thick batter.

In a small dish, combine the powdered sugar and cornstarch by whisking them together.

Using a cookie scoop (around 1 1/2 tablespoons), make dough balls and cover them completely in the sugar-cornstarch mix. Place them on your prepped baking tray, spaced roughly an inch apart.

Bake the cookies for about 10 to 12 minutes, or until their tops dry out and edges are firm.

Take the cookies out of the oven and press a heart-shaped candy lightly onto each one while they're warm.

Leave the cookies on their tray for 5 minutes to cool down a bit, then move them to a rack to finish cooling.
