Hearty Cabbage Dish (Print Version)

# Ingredients:

01 - 2 tablespoons vegetable oil.
02 - 1 pound ground beef, lean.
03 - A pinch of salt and black pepper.
04 - 1 medium onion, yellow, chopped small.
05 - 2 garlic cloves, crushed.
06 - 4 cups cabbage, shredded.
07 - 2 carrots, medium-sized, sliced into quarters.
08 - 4 cups beef broth, low in sodium.
09 - Three 8 oz. cans of tomato sauce.
10 - 1/2 cup of uncooked white rice.
11 - 1 bay leaf.
12 - 3 tablespoons brown sugar, lightly packed.
13 - 2 tablespoons parsley, chopped fresh.

# Instructions:

01 - Warm up the oil in a big soup pot or Dutch oven over medium heat, then add the ground beef.
02 - Toss in salt and pepper, then cook the beef till it’s nicely browned.
03 - Stir in the chopped onion and crushed garlic, letting them cook for a couple of minutes until the onions soften up.
04 - Mix in the cabbage, carrots, tomato sauce, broth, rice, bay leaf, and brown sugar until everything’s blended well.
05 - Let the soup gently bubble on low heat for about 25 minutes, or until the rice is soft.
06 - Take out the bay leaf, then top with fresh parsley before serving it up.
