Hearty Cowboy Stew (Print Version)

# Ingredients:

01 - 1 1/2 pounds ground beef with 80/20 fat ratio.
02 - 2 russet potatoes, peeled and cubed into 1/2 inch pieces.
03 - 1 medium-sized onion, diced into small chunks.
04 - 3 cloves of garlic, finely chopped.
05 - 2 (16-ounce) cans of baked beans or ranch beans, including their liquid.
06 - 1 (14.5-ounce) can petite diced tomatoes, with juices included.
07 - 2 (12-ounce) packages of kielbasa, sliced into 1/2 inch rounds.
08 - 4 pieces of bacon, cut into small bits.
09 - 1 (15-ounce) can sweet corn, including the liquid.
10 - 1 (7-ounce) can green chilies, keeping the juices.
11 - 1 cup water.
12 - 3 tablespoons of regular flour.
13 - 1 1/2 teaspoons of salt.
14 - 1/2 teaspoon of black pepper.
15 - 1 teaspoon of chili powder.
16 - 2 tablespoons of parsley, shredded.

# Instructions:

01 - Toss the bacon pieces into a large pot and cook on medium heat till they're super crispy. Scoop them out with a slotted spoon and let them drain on a paper towel-lined plate.
02 - Drop the sausage slices into the same pot and fry them till both sides have a nice brown finish. Keep an eye on the heat so they don’t burn. Once done, move them to the plate with the bacon.
03 - Mix the ground beef, chopped onion, and minced garlic in the pot. Stir and cook everything until there’s no pink left in the beef.
04 - Sprinkle the chili powder, salt, pepper, and flour over the cooked beef. Stir it well and let it cook for one minute to blend the seasonings.
05 - Pour in the tomatoes, beans, corn, green chilies, potatoes, cooked bacon, sausage, and a cup of water. Let it come to a boil, then reduce the heat. Cover and simmer for an hour, stirring now and then.
06 - Before serving, toss some fresh parsley over the top for a pop of color and flavor.
07 - Getting too thick? Pour in a little extra water and stir until you reach your preferred texture.
