Toss turkey carcass in a big pot. Fill with cold water, toss in onion, carrots, celery, herbs, and peppercorns.

Heat on high until boiling. Lower to a simmer and let it bubble for 4 hours, skimming foam every so often.

Remove everything solid (like bones and veggies) and strain the liquid through a fine strainer.

In a fresh pot, melt butter and sauté fresh celery, onions, and carrots until they’re soft, about 10 minutes.

Pour the strained liquid into the pot. Sprinkle seasonings into it and let it lightly boil until veggies are tender.

Throw in noodles (if you want). Cook until they’re done, then stir in turkey meat to warm it all through.
