Homemade Turkey Soup (Print Version)

# Ingredients:

01 - 1 turkey carcass with any leftover drippings.
02 - 1 big yellow onion, cut into chunks.
03 - 2 chopped carrots.
04 - 2 celery stalks (with leaves), diced.
05 - 4 parsley sprigs.
06 - 2 sprigs of thyme or 1 tsp of the dried kind.
07 - 1 whole bay leaf.
08 - 8 peppercorns, unground.
09 - 2 tbsp of melted butter.
10 - 2 minced garlic cloves.
11 - 2 tsp of poultry spice mix.
12 - 6 oz of egg noodles (optional).
13 - 3 cups of shredded cooked turkey meat.
14 - Season with salt & pepper as needed.

# Instructions:

01 - Toss turkey carcass in a big pot. Fill with cold water, toss in onion, carrots, celery, herbs, and peppercorns.
02 - Heat on high until boiling. Lower to a simmer and let it bubble for 4 hours, skimming foam every so often.
03 - Remove everything solid (like bones and veggies) and strain the liquid through a fine strainer.
04 - In a fresh pot, melt butter and sauté fresh celery, onions, and carrots until they’re soft, about 10 minutes.
05 - Pour the strained liquid into the pot. Sprinkle seasonings into it and let it lightly boil until veggies are tender.
06 - Throw in noodles (if you want). Cook until they’re done, then stir in turkey meat to warm it all through.

01 - Perfect for using up holiday leftovers.
02 - Make and freeze the broth to use long-term.
03 - Skip the noodles if cutting carbs.
