Honey Butter Poppers (Print Version)

# Ingredients:

→ Poppers

01 - 1 large egg
02 - ¼ cup (60ml) vegetable oil
03 - 1 cup (240ml) buttermilk
04 - ½ teaspoon salt
05 - 1 tablespoon baking powder
06 - ¼ cup (50g) granulated sugar
07 - 1 cup (125g) plain flour
08 - 1 cup (120g) cornmeal

→ Honey Butter Glaze

09 - ¼ teaspoon salt
10 - 2 tablespoons honey
11 - ¼ cup (60g) melted unsalted butter

# Instructions:

01 - Heat your oven to 400°F (200°C). Get your mini muffin pan ready by greasing it or lining up silicone molds.
02 - Grab a big bowl and mix together cornmeal, flour, sugar, salt, and baking powder.
03 - In another bowl, whisk the egg, oil, and buttermilk until smooth and combined.
04 - Stir the wet mixture slowly into the dry mix. Keep going gently until it’s just blended—don’t overdo it.
05 - Scoop batter into each muffin cup, filling them up about three-quarters. Bake them for 10 to 12 minutes, or until they’re golden and pass the toothpick test.
06 - In a small bowl, mix honey, melted butter, and salt until it’s all smooth.
07 - While the poppers are still warm, slather them with the honey butter glaze. Serve them right away.

# Notes:

01 - Tastes best straight out of the oven
02 - Silicone molds are a good alternative to the muffin tin
