Hot Chocolate Cookie (Print Version)

# Ingredients:

01 - ½ cup granulated sugar.
02 - 3 large eggs, brought to room temperature.
03 - 6 ounces dark or semi-sweet chocolate, cut into pieces.
04 - ½ cup plus 2 tablespoons all-purpose flour.
05 - Flaky sea salt to sprinkle on top.
06 - 2 tablespoons unsweetened cocoa powder.
07 - ½ teaspoon kosher salt.
08 - 2 tablespoons vanilla extract.
09 - ½ teaspoon baking soda.
10 - 1½ cups semi-sweet chocolate chips.
11 - 6 tablespoons salted butter.

# Instructions:

01 - Set your oven to 350°F and line your pans with parchment.
02 - Melt chocolate chips and butter in the microwave. Whisk sugar and eggs until frothy, which takes about 2 minutes. Stir in melted chocolate and vanilla until smooth.
03 - Blend in flour, salt, cocoa powder, and baking soda. Gently toss in chocolate chunks. Chill dough for 30 minutes until it holds its shape.
04 - Scoop out dough (about ¼ cup each) onto the prepared pans. Let them chill for another 15-30 minutes to firm up.
05 - Space cold dough balls 2 inches apart on the pans. Bake for 8-12 minutes until the edges are set, but the centers still look soft.
06 - Scatter a little sea salt on the cookies. They’re best warm but can sit for up to 4 days.

# Notes:

01 - Freeze extra cookie dough for up to 3 months.
02 - If it's too sticky, add more flour ¼ cup at a time.
