Hot Honey Sausage Rolls (Print Version)

# Ingredients:

01 - Sausage made with pork and sage (1 pound).
02 - Freshly shredded sharp cheddar (1/2 cup).
03 - Panko-style breadcrumbs (1/2 cup).
04 - Two large eggs.
05 - Two tablespoons of Dijon mustard.
06 - One tablespoon of fresh thyme (plus some extra for topping).
07 - A 17.3-ounce box of puff pastry (2 sheets).
08 - Two tablespoons of everything bagel seasoning.
09 - Hot honey to drizzle over.

# Instructions:

01 - Set your oven to 400°F. Line a baking tray with parchment paper.
02 - In a mixing bowl, stir together the sausage, shredded cheese, breadcrumbs, one egg, and thyme until evenly mixed.
03 - Whisk the other egg together with a bit of water in a smaller bowl.
04 - Dust your surface with flour, roll out each sheet of pastry slightly, then cut into four long strips total (two from each sheet).
05 - Form the sausage mixture into four even ropes and set one in the center of each pastry strip.
06 - Brush mustard down one side of the pastry. Add egg wash to the other side. Wrap snugly with the seam facing down.
07 - Slice each roll into smaller portions (1½-inch pieces). Make small slashes on top, coat with egg wash, and sprinkle with the bagel seasoning.
08 - Bake for 18 to 20 minutes, or until puffed up and golden brown.
09 - After cooling for a few minutes, drizzle hot honey on top and sprinkle extra thyme before serving.
