Set your oven to 400°F. Line a baking tray with parchment paper.

In a mixing bowl, stir together the sausage, shredded cheese, breadcrumbs, one egg, and thyme until evenly mixed.

Whisk the other egg together with a bit of water in a smaller bowl.

Dust your surface with flour, roll out each sheet of pastry slightly, then cut into four long strips total (two from each sheet).

Form the sausage mixture into four even ropes and set one in the center of each pastry strip.

Brush mustard down one side of the pastry. Add egg wash to the other side. Wrap snugly with the seam facing down.

Slice each roll into smaller portions (1½-inch pieces). Make small slashes on top, coat with egg wash, and sprinkle with the bagel seasoning.

Bake for 18 to 20 minutes, or until puffed up and golden brown.

After cooling for a few minutes, drizzle hot honey on top and sprinkle extra thyme before serving.
