Turn your oven to 350°F. Lightly coat an 8-inch springform or round cake pan with cooking spray.

Lay the almonds out on a small baking tray and toast them for 4 to 5 minutes until they turn golden brown. Keep an eye on them so they don’t burn. Let them cool when done.

In a medium bowl, stir together almond flour, baking powder, and salt until combined.

Use a large bowl to whisk the eggs, maple syrup, oil, almond extract, and vanilla extract together until smooth and creamy.

Pour the dry ingredient mix into the bowl with the wet ingredients. Blend them until you have a smooth batter.

Pour the batter into the greased cake pan. Evenly sprinkle the toasted almond slices on top.

Bake for about 20 to 25 minutes. You’ll know it’s done when the top has a light golden color and a toothpick poked into the center comes out clean.

Once it has cooled in the pan, you can sprinkle it with powdered sugar and a few more raw almond slices if you’d like.
