Almond Cake Made Simple (Print Version)

# Ingredients:

→ Dry Ingredients

01 - 2 teaspoons baking powder
02 - 2 cups of finely ground, blanched almond flour
03 - ¼ teaspoon of salt

→ Wet Ingredients

04 - ½ teaspoon of vanilla flavoring
05 - 1 teaspoon of almond flavoring
06 - 3 large eggs
07 - 2 tablespoons of either olive or avocado oil
08 - ½ cup of maple syrup

→ Toppings

09 - A sprinkle of powdered sugar as an optional topping for serving
10 - ¼ cup of sliced raw almonds, plus extra to garnish

# Instructions:

01 - Turn your oven to 350°F. Lightly coat an 8-inch springform or round cake pan with cooking spray.
02 - Lay the almonds out on a small baking tray and toast them for 4 to 5 minutes until they turn golden brown. Keep an eye on them so they don’t burn. Let them cool when done.
03 - In a medium bowl, stir together almond flour, baking powder, and salt until combined.
04 - Use a large bowl to whisk the eggs, maple syrup, oil, almond extract, and vanilla extract together until smooth and creamy.
05 - Pour the dry ingredient mix into the bowl with the wet ingredients. Blend them until you have a smooth batter.
06 - Pour the batter into the greased cake pan. Evenly sprinkle the toasted almond slices on top.
07 - Bake for about 20 to 25 minutes. You’ll know it’s done when the top has a light golden color and a toothpick poked into the center comes out clean.
08 - Once it has cooled in the pan, you can sprinkle it with powdered sugar and a few more raw almond slices if you’d like.
