Jalapeño Cheddar Tuna (Print Version)

# Ingredients:

01 - 5 oz of drained yellowfin tuna.
02 - 2 tbsp mayonnaise.
03 - 1 tsp hot sauce, add more if you'd like.
04 - 1 tbsp plain yogurt.
05 - 2 tbsp finely chopped green onion.
06 - 1 tsp whole-grain Dijon mustard.
07 - Salt and pepper, as needed.
08 - 2 thick slices of good bread.
09 - 2 slices of sharp cheddar cheese.
10 - Fresh jalapeño slices for a bit of heat.
11 - 2 tbsp diced jalapeño for mixing.

# Instructions:

01 - In a bowl, stir together the tuna, onions, diced jalapeño, mayo, yogurt, mustard, hot sauce, and a pinch of salt and pepper.
02 - Lightly toast the bread slices till golden.
03 - Layer the tuna mix on one slice of toast, add cheese and some jalapeño slices on top.
04 - Heat under the broiler for about 2 minutes till the cheese gets all melty.

# Notes:

01 - Tuna stored in oil gives a richer taste.
02 - This recipe can serve two if paired with sides.
03 - Want it spicier? Add more jalapeños to tweak the heat.
