Chili Lime Chicken & Rice (Print Version)

# Ingredients:

→ Protein

01 - 6 chicken thighs (skinless and boneless) or 4 thin chicken breasts

→ Seasonings

02 - 1 teaspoon garlic powder
03 - 3 teaspoons chili powder
04 - 1 teaspoon onion powder
05 - 1/4 teaspoon black pepper
06 - 1/4 teaspoon cayenne
07 - 1 teaspoon sea salt
08 - 1 teaspoon smoked paprika

→ Other Ingredients

09 - Juice of one lime (keep extras for serving)
10 - 2 tablespoons cooking oil
11 - Fresh cilantro for garnish
12 - 2 1/4 cups chicken stock
13 - 1 cup dry white rice

# Instructions:

01 - Mix together paprika, chili powder, garlic powder, onion powder, cayenne, salt, and pepper. Rub half onto chicken, keeping the rest aside.
02 - Warm oil in a pan on medium. Cook chicken until browned on both sides, about 3 to 4 minutes per side. Take it out of the pan.
03 - Pour the lime juice, uncooked rice, leftover seasoning, and chicken stock into the pan. Stir well, then place the chicken on top.
04 - Cover the pan and leave it cooking for 20-25 minutes, letting the liquid soak in. Fluff up the rice and sprinkle cilantro and lime on top before serving.
