Meatloaf Rich Sauce (Print Version)

# Ingredients:

→ Main Loaf

01 - 1 teaspoon dried oregano
02 - 1 teaspoon dried thyme
03 - Salt and pepper to your liking
04 - 2 large eggs, whisked
05 - 1 onion, finely diced
06 - 2 tablespoons Worcestershire sauce
07 - 2 pounds ground beef, fresh
08 - ¼ cup of ketchup
09 - 2 garlic cloves, minced
10 - 1 cup of breadcrumbs

→ Gravy

11 - ½ cup of heavy cream
12 - 4 tablespoons butter (unsalted)
13 - Salt and pepper for seasoning
14 - 4 tablespoons all-purpose flour
15 - 2 cups of beef stock
16 - 2 cups of fresh mushrooms, sliced up

# Instructions:

01 - Set your oven to heat up to 350°F (175°C). As it warms, either grease your baking dish or line a tray with parchment so nothing sticks.
02 - In a big bowl, toss together the minced garlic, onion, meat, beaten eggs, ketchup, herbs, breadcrumbs, Worcestershire, salt, and pepper. Blend with your hands, stopping once it's evenly mixed - no need to overdo it!
03 - Form your mixture into a loaf shape. Put it on your prepped tray or dish. Then bake it in your hot oven for 50-60 minutes, or until it hits an internal temp of 160°F (71°C).
04 - While the loaf bakes, get going on the mushroom sauce. Heat a skillet over medium and melt the butter. Toss in the mushrooms and cook till they turn golden and smell amazing, about 5-7 minutes.
05 - Sprinkle the mushrooms with flour and stir nonstop for 2 minutes. Pour in the beef broth bit by bit, then add the cream. Keep stirring till it's silky and thick, another 5-7 minutes. Season how you like it.
06 - After baking, let the loaf sit for a few minutes. Slice and spoon that dreamy mushroom sauce over each piece, and you'll get plenty of happy smiles!

01 - For a lighter option, swap the beef for turkey or chicken.
02 - This dish goes great with buttery mashed potatoes and lightly steamed veggies.
