Mint Chocolate Snowballs (Print Version)

# Ingredients:

01 - 1 tsp mint extract.
02 - ½ tsp salt.
03 - Green gel food coloring (optional).
04 - ¾ cup mini chocolate chips.
05 - 2¼ cups plain flour.
06 - Extra powdered sugar for dusting.
07 - ⅔ cup sifted powdered sugar.
08 - 1 cup unsalted butter, softened at room temp.

# Instructions:

01 - Set up a baking sheet with parchment paper. Cream together the butter and powdered sugar until it's light and airy.
02 - Combine the flour, salt, and mint flavoring with the butter mixture. Mix in green coloring for a fun touch, then add the chocolate chips.
03 - Scoop dough with a tablespoon, roll into balls, and place them on the lined baking sheet. Let them chill in the fridge for 30 minutes.
04 - Turn on the oven to 375°F. Bake cookies for 7-8 minutes until just golden underneath. Let them rest on the baking sheet for 5 minutes.
05 - While still warm, coat each cookie in powdered sugar. After they're completely cool, roll again for extra sweetness.
