Molasses Cookies (Print Version)

# Ingredients:

01 - 3/4 cup of unsalted butter, room temperature.
02 - 1/2 cup white sugar.
03 - 1/4 cup packed dark brown sugar.
04 - 1/3 cup of molasses.
05 - 1 large egg.
06 - 2 and 1/4 cups of plain, all-purpose flour.
07 - 2 teaspoons of baking soda.
08 - 2 teaspoons ground ginger spice.
09 - 1 teaspoon cinnamon powder.
10 - 1 teaspoon ground clove spice.
11 - 1/2 teaspoon of table salt.
12 - 1/2 cup raw sugar for coating.
13 - 24 full-sized marshmallows.

# Instructions:

01 - Combine butter with sugars til smooth and light. Stir in molasses and crack in the egg. In a separate bowl, whisk together the dry stuff, then fold it into the wet mixture.
02 - Shape dough into a ball, wrap tightly in plastic wrap, and stick it in the fridge for at least 90 minutes.
03 - Set your oven to 350°F and get your baking trays ready with parchment paper.
04 - Take 2-3 tablespoons of dough, flatten it, wrap it around a marshmallow, and roll the whole thing in raw sugar.
05 - Pop them in the oven for 9-10 minutes until cracks form and marshmallow peeks out. Let cool on trays for 10 minutes, then move to a rack.

# Notes:

01 - If you leave them in too long, the marshmallow might disappear!
02 - They’ll settle and spread as they cool down.
