No-Bake Raspberry Balls (Print Version)

# Ingredients:

01 - 1/4 cup powdered sugar.
02 - 1 cup white chocolate chips.
03 - 1 tablespoon coconut oil.
04 - 8 oz cream cheese, softened.
05 - Freeze-dried raspberry powder for sprinkling.
06 - 1 teaspoon vanilla.
07 - 1/4 cup mashed fresh raspberries.

# Instructions:

01 - Mix the softened cream cheese, vanilla, and powdered sugar until creamy and smooth.
02 - Gently stir the mashed raspberries into the creamy mixture.
03 - Let the mixture chill for about 30 minutes so it firms up.
04 - Scoop out tablespoons of the mixture, roll them into balls, and place them on a lined tray.
05 - Put the tray in the freezer for an hour so the balls firm up completely.
06 - Melt the white chocolate with the coconut oil in the microwave, warming it in short 20-second intervals and stirring each time.
07 - Using a fork, cover the frozen balls in the melted chocolate.
08 - While the chocolate coating is still wet, sprinkle the tops with raspberry powder.
09 - Chill in the fridge for another 30 minutes until the chocolate hardens.

# Notes:

01 - Pick full-fat cream cheese for the creamiest result.
02 - Keep the balls chilled while coating them, so they don't soften.
03 - Store these treats in the fridge for 5 days or pop them in the freezer for 3 months.
