Turn on your oven to 375°F (190°C). Coat a 9x13-inch dish with butter or non-stick spray.

Spread half the potato slices into the baking dish. Sprinkle some pepper and salt over them. Pour one can of soup and half the cream evenly onto the potatoes.

Layer the rest of the potatoes on top. Add the second can of soup, the rest of the cream, and sprinkle Gruyere and thyme over everything.

Wrap it up with foil and bake for 45 minutes. Take the foil off, sprinkle crispy onions on top, and bake for 15 more minutes until golden and bubbly.
