Peanut Chicken Slow Cooker (Print Version)

# Ingredients:

01 - 1/4 cup soy sauce.
02 - 1.5 pounds of boneless chicken breasts.
03 - 1 tablespoon of honey or syrup.
04 - 1/2 cup chicken stock.
05 - 1 red bell pepper, chopped small.
06 - 1/2 cup smooth peanut butter.
07 - 1 teaspoon of chili paste made with garlic.
08 - 1/2 yellow onion, cut into small cubes.
09 - 2 chopped garlic cloves.
10 - 2 tablespoons finely chopped cilantro.
11 - 1 teaspoon toasted sesame oil.
12 - 1 tablespoon of fresh lime juice.

# Instructions:

01 - Place onion, garlic, and bell pepper at the bottom of your slow cooker.
02 - Put the chicken breasts right on top of the veggies in the cooker.
03 - Combine peanut butter, soy sauce, stock, honey, sesame oil, and chili garlic paste in a bowl.
04 - Drizzle the sauce mixture over the chicken.
05 - Let it cook for 2 to 3 hours on HIGH or 4 to 5 hours on LOW.
06 - Add chopped cilantro and a squeeze of lime juice just before serving.

# Notes:

01 - It can be made on high heat or low heat settings.
02 - Choose smooth peanut butter with simple ingredients.
03 - Lime and cilantro should go in last for a fresh kick.
